what field and value do I have to put in the csv file to make a new product "don't track inventory"

  Do you have the following setting in Zoey - Products > Settings > Inventory > Manage Stock set to NO ?
  I would try to add a column in your CSV with > use_config_manage_stock and set the value to 0 for each SKU, it shouldn't track the inventory then.
