Will I be able to add additional information pages to my site? Not just the blog, but i.e. an about us, store info page?

  You can definitely add as many additional information pages to your store as needed. Simply go to Edit My Design and click on "Add Page". See here for more: https://support.zoey.com/docs/adding-a-page
