Add Email Address Field to the Shipping Details on Checkout

We want to capture the email address for the "receiver" of what is being shipped and send them an email when an item ships. We sell perishable gifts and want to notify the recipient. At a minimum the request is to capture the data. Ideally, we would also like to be able to email that address or export that data and import somewhere else if necessary.
